Nova’s goal is to bring the local LA community the freshest, unpasteurized ‘nama sake’ that is difficult to import from Japan, and make sake a part of the craft brewery movement in LA. There are craft sake breweries in New York, San Francisco, Arizona, Texas, etc. but not in Los Angeles which is why Emiko, the owner/certified sake sommelier, started this brewery. The sake brewer/COO James Jin (former Sake Specialist/sake sommelier) went to Japan to learn to brew from an award-winning brewery for sake production.
